Soup season is here! With the snow drifting down and the wind's bitter bite, there's no better cure than the comfort of homemade soup. This broth is so easy to make and costs nothing! Plus, you are recycling when you make it!
- Every time you peel a carrot, chop onion or celery, or crush garlic, toss the ends, peels, and leaves that you'd normally throw away into a freezer Ziploc bag and toss into the freezer.
- Once the bag is full (I use quart size bags.) simply place the scraps into a pan with about 2 quarts of water. I like to add a few bay leaves and whole peppercorns to my "brew".
- Bring to a boil and turn back to a simmer for 30-45min.
- Turn the heat off and let it cool.
- Once cool, pour broth through a strainer and discard the scraps.
- Measure using a 14.5oz can into plastic freezer containers and label. This way you know how many "cans" of broth you have.
- The next time you make a soup that calls for broth, pop your tasty pre-measured homemade broth right in.
- This is a great technique if you are health-conscious as it is suitable for vegetarians, it's fat free, and you can control the amount of salt.
